Thai Peanut Asian Chicken Lettuce Wraps

  • 1 package Spicy Asian Marinated Chicken Thighs
  • 2 heads Bibb lettuce (16 lettuce leaves)
  • Thai Peanut Sauce (recipe below)
  • 1 bunch scallions, chopped
  • 2 jalapenos, sliced
  • 6 radishes, thinly sliced
  • 1/2 cup chopped roasted peanuts
  • 1/2 cup bean sprouts
  • Lime wedges, for garnish
  • Cilantro, for garnish

For the Thai Peanut Sauce

  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons chili garlic sauce
  • 1 lime, juiced
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon ground ginger
  • 2-4 tablespoons warm water


    1. Preheat grill to medium-high heat.  Grill chicken, according to package directions, until just cooked through.  Remove from heat and chop into bite-sized pieces.
    2. Place chopped chicken along with lettuce and toppings on a large serving platter.  Allow guests to create their own lettuce wraps, topping with the Thai Peanut Sauce.

    For the Thai Peanut Sauce

    • Combine peanut butter, soy sauce, brown sugar, vinegar, chili garlic sauce, half of the lime juice, garlic, and ginger. Whisk to fully combine.
    • Add water, 1 tablespoon at a time, until desired consistency is reached. Taste and add juice of other half of lime if desired.
