Ingredients
- 1 package Spicy Asian Marinated Chicken Thighs
- 2 heads Bibb lettuce (16 lettuce leaves)
- Thai Peanut Sauce (recipe below)
- 1 bunch scallions, chopped
- 2 jalapenos, sliced
- 6 radishes, thinly sliced
- 1/2 cup chopped roasted peanuts
- 1/2 cup bean sprouts
- Lime wedges, for garnish
- Cilantro, for garnish
For the Thai Peanut Sauce
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons chili garlic sauce
- 1 lime, juiced
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon ground ginger
- 2-4 tablespoons warm water
Preparation
- Preheat grill to medium-high heat. Grill chicken, according to package directions, until just cooked through. Remove from heat and chop into bite-sized pieces.
- Place chopped chicken along with lettuce and toppings on a large serving platter. Allow guests to create their own lettuce wraps, topping with the Thai Peanut Sauce.
- Combine peanut butter, soy sauce, brown sugar, vinegar, chili garlic sauce, half of the lime juice, garlic, and ginger. Whisk to fully combine.
- Add water, 1 tablespoon at a time, until desired consistency is reached. Taste and add juice of other half of lime if desired.
