  • ½ cup peanut butter
  • ½ cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • ¼ teaspoon red pepper flakes

Cabbage slaw

  • 2 cups shredded Napa cabbage

    1. Place the chicken tenderloins in a bag or under plastic wrap. Use a mallet or skillet bottom to flatten the chicken. Ribbon the chicken on metal or bamboo skewers lengthwise.
    2. Combine peanut butter, soy sauce, vinegar, sesame oil, pepper flakes, and garlic powder in a mixing bowl. Reserve half sauce.
    3. Preheat an outdoor grill on high heat.
    4. Remove the chicken from the package, reduce the heat to low, and cook for 15 minutes until cooked throughout. Baste chicken with half of the sauce while grilling.
