Island Pineapple Chicken & Rice

  • 2-3lbs. George’s Farmers Market chicken thighs
  • 1 tablespoon vegetable oil
  • 1 cup pineapple tidbits with juice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ketchup
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic
  • 2 teaspoons water
  • 1 teaspoon corn starch
  • 2 cups cooked white rice
  • Garnish sliced green onions


    1. Heat oil in a skillet over medium high heat. Sear the chicken on both sides.
    2. While searing the chicken, combine the pineapple and juice, soy sauce, sugar, ketchup, ginger and garlic in a mixing bowl. And add into the skillet with the chicken. Cook for 15 minutes or until chicken is cooked to an internal temperature of 165º
    3. Remove the chicken from the skillet and set aside. Combine the water and starch together and mix in with the sauce in the skillet until thickening begins, remove from heat. Return the chicken to the skillet and coat with the sauce.
    4. Serve over cooked rice and finish with green onions.
