BBQ Chicken Salad with Avocado Yogurt Dressing

Ingredients

  • 1 package Georges Farmers Market® Savory Starters Chicken Breast Chunks
  • 1 cup BBQ sauce (homemade or your favorite store-bought variety)
  • 2 heads romaine lettuce, chopped
  • Spicy Southwest Corn (recipe below)
  • 1 (15oz) can black beans, rinsed and drained
  • 2 avocados, chopped
  • 1 pint cherry or grape tomatoes, halved
  • 1 cucumber, chopped
  • Avocado Yogurt Dressing (recipe below)

For the Spicy Southwest Corn

  • 4 ears corn on the cob, kernels removed and reserved, cobs discarded
  • 1 ½ tablespoons butter
  • 1 tablespoon oil
  • ½ tablespoon ancho chile powder
  • ½ teaspoon chile de arbol powder or cayenne pepper (omit if you prefer not spicy)
  • Kosher salt

For the Avocado Yogurt Dressing

  • 2 ripe avocados, chopped
  • 1 cup plain Greek yogurt
  • ½ cup extra virgin olive oil
  • 1 lime, juiced
  • 2 cloves garlic
  • Kosher salt

Preparation

    1. Preheat the air fryer to 400°F.
    2. Combine chicken breast chunks with ½ cup BBQ sauce.
    3. Spray air fryer basket with nonstick cooking spray. Add chicken in a single even layer, in batches as needed.
    4. Cook for 9-12 minutes, until chicken is browned and cooked through, shaking basket halfway.
    5. Remove chicken from the air fryer and toss with remaining BBQ sauce.
    6. Layer bowls with lettuce, southwest corn, black beans, avocado, tomato, and cucumber.
    7. Drizzle generously with Avocado Yogurt Dressing and enjoy!

    For the Spicy Southwest Corn

    1. Heat butter and oil in a medium skillet over medium heat.
    2. Once hot, add corn kernels, chile powder(s), and season with salt.
    3. Let corn cook, stirring occasionally, until cooked through, about 10 minutes.

    For the Avocado Yogurt Dressing

    1. In a food processor, puree the avocado, Greek yogurt, olive oil, lime juice, and garlic.
    2. Season generously with Kosher salt.
