Ingredients

  • 1 package Georges Farmers Market Savory Starters Chicken Breast Chunks
  • 1 cup buttermilk
  • 3/4 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 egg
  • 1 teaspoon hot sauce
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups panko bread crumbs
  • Sweet chili sauce (recipe below)
  • 2 cups cooked rice
  • 1 avocado, thinly sliced
  • 1 large cucumber, sliced
  • 1 ½ cups finely shredded red cabbage
  • 1 cup halved grape tomatoes
  • Chopped parsley, for garnish

for the Sweet Chili Sauce

  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • Kosher salt
  • Freshly ground black pepper

Preparation

    1. In a medium bowl, combine buttermilk with flour, cornstarch, egg, and hot sauce.  Season with Kosher salt and freshly ground black pepper.  Place the panko in a separate bowl.  Dip chicken into buttermilk mixture, in batches as necessary, until fully coated.  Remove from buttermilk mixture and coat in panko, pressing to coat.
    2. Preheat air fryer to 400°F.  Spray basket with nonstick cooking spray and then place coated chicken in a single layer in the air fryer, in batches as needed.  Spray chicken with cooking spray and cook for 12-16 minutes, flipping halfway, until the chicken is crispy and cooked through.
    3. Divide rice between bowls.  Top with vegetables and Bang Bang Chicken.  Drizzle generously with Sweet Chili Sauce and garnish with parsley.

    for the Sweet Chili Sauce

    • Whisk together ingredients in a small bowl and season with Kosher salt and freshly ground black pepper.
