Ingredients
- 1 Georges Farmers Market Whole Chicken
- 1 stick butter, softened
- 1 lemon, zested
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 curry powder
- 1⁄4 cup chicken broth
- 2 cups cooked rice
Garnishes
- Red onion
- Thinly sliced Fresh cilantro, leaves
- Naan bread
- Prepared tzatziki sauce
Preparation
- Preheat oven at 425°F.
- Combine the butter, lemon zest, ginger, garlic, and curry powder in a mixing bowl.
- Loosen the skin from the meat of the chicken. Stuff the butter underneath the skin.
- Place the chicken in an instant pressure cooker with broth. Cook the chicken with high pressure for 45 minutes to 1 hour. Carefully remove the chicken and place on a baking sheet. Roast the chicken for 15 minutes to crisp the skin golden.
- Serve the chicken family-style with rice, red onion, cilantro, naan bread and tzatziki sauce.
