Ingredients
- 8 Georges Farmers Market Chicken Tenderloins
- ½ cup peanut butter
- ½ cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- ¼ teaspoon red pepper flakes
- ¼ teaspoon garlic powder
Cabbage slaw
- 2 cups shredded Napa cabbage
- ½ cup sliced green onions
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
Preparation
- Place the chicken tenderloins in a bag or under plastic wrap. Use a mallet or skillet bottom to flatten the chicken. Ribbon the chicken on metal or bamboo skewers lengthwise.
- Combine peanut butter, soy sauce, vinegar, sesame oil, pepper flakes, and garlic powder in a mixing bowl. Reserve half sauce.
- Preheat an outdoor grill on high heat.
- Remove the chicken from the package, reduce the heat to low, and cook for 15 minutes until cooked throughout. Baste chicken with half of the sauce while grilling.
- Combine the cabbage, green onions, vinegar, and sesame oil in a mixing bowl. Serve the chicken over the cabbage and finish with the remaining sauce.
